Okinawa sits surrounded by sea, and for most of its history salt was how the island kept food through the heat: island tofu, salted pork, fish, seaweed. Salt made in Okinawa disappeared once. The island's salt fields were shut down in 1973, and salt could not legally be made straight from seawater again until the national salt monopoly ended in 1997. What is made there now came back after that.
