Yamabuki Koji is a softly sweet, mildly salted young-aged miso. A 15-koji ratio, well above the brewery's typical 7 to 10, lets the gentle character of koji (steamed rice culture) come through clearly.
Made with rare Hakubi soybeans, valued for their high protein and umami, the result is a fresh, balanced miso where koji sweetness and soybean umami meet a quiet saltiness. The second sweetest in the Yamabuki lineup, it suits miso soup as well as marinades for salmon, chicken, and vegetables.
