An additive-free yuzu syrup pressed from yuzu grown in Shiromi, a small mountain village deep in Miyazaki Prefecture, and sweetened only with Hokkaido beet sugar. The aroma is bright and floral, and the finish is clean and gently tart rather than heavy. Dilute about 1:5 with still or sparkling water for a fragrant yuzu soda, splash into beer or shochu, or spoon over yogurt, pancakes, and vanilla ice cream. A small amount also lifts vinaigrettes, marinades, and a teriyaki-style glaze.
