What it is
What makes it special
Suji-Aonori is prized above all for its aroma, clean and fresh, with little of the "fishy" note some seaweeds carry. It tastes like it was just dried, because it very nearly was. Sea Vegetable selects only the top one percent of the harvest and dries it gently, so the fragrance stays bright in every pinch.
It's also unusually versatile. While green seaweed is often thought of as a topping for Japanese dishes alone, Suji-Aonori pairs beautifully with oil, butter, dairy, and potatoes, which makes it just as at home in Western cooking.
How to enjoy it
Just open the pack and sprinkle
A pinch adds its fragrance in an instant.
Over fries and chips
Our favorite way to start. A shower over hot French fries or potato chips, where salt, oil, and that ocean aroma come together.
Suji-Aonori toast
Sprinkle generously over hot buttered toast. Simple, and unexpectedly wonderful.
Beyond the everyday
Stir into a cream pasta or risotto at the very end, or finish a butter-seared fish. Lovely, too, on freshly cooked rice or in miso soup.

They work to bring seaweed, much of it in decline in the wild, back through low-impact growing, and explore new ways to enjoy it, carrying a centuries-old food culture forward for the health of both the ocean and the people who eat from it.
