Low-Sodium White Miso (Additive-free) [信州 無添加 塩気の少ない山吹味噌] 500g
A reduced sodium white miso brewed with only water, soybeans, rice, and salt. No additives, no preservatives. The paste keeps the soft, mellow sweetness of a classic Shinshu shiro miso while dialing back the salt for a lighter, gentler finish that lets the koji aroma sit forward.
Use anywhere you reach for white miso and want a quieter saltiness: daily miso soup, lighter marinades for fish and chicken, dressings, dips, blanched vegetable aemono, and miso butter for corn or grilled mushrooms. The lower salt profile suits households watching sodium without changing the way the miso behaves in the pot.
Made by Yamabuki Miso in Nagano Prefecture, a Shinshu brewery committed to additive free fermentation in the cold mountain climate that has shaped Shinshu miso for centuries.
