Tosakanori is a crimson red seaweed with a striking color and a snappy, crunchy texture, carefully dried immediately after harvest to preserve its natural flavor and freshness. Rehydrated in plenty of water for about four minutes, it expands five to six times in volume.
It pairs naturally with acidity, so toss it through salads with tomato, citrus, or berries, or treat it like a vegetable in pickles. Add it at the very end of stir-fries for a chewy bite, or heat it longer until it melts into a jelly for desserts with kuromitsu and kinako.
