The wooden-barrel still-fermentation gives the vinegar a fuller body than pure rice vinegar, with a rounded, additive-free character. Use it as a daily base vinegar for sunomono (vinegared salads), salad dressings, marinades, and simmered dishes where a quietly savory acidity is wanted.
