There is a Japanese condiment company with a simple but ambitious goal: to create a flavor found nowhere else in the world.
That company is Yuzukararin Co., Ltd. (柚子辛凛), based in Osaka and drawing ingredients from Kochi Prefecture. Their work is built around one ingredient: Japanese yuzu. It started with one mother in one kitchen, with a seasoning she made to share with the people around her.
Years of research and reformulation later, that home recipe became a shelf-stable shelf-stable condiment ready for any kitchen.

The Star? Green Yuzu
Yuzukararin's seasoning brings together the bright aroma of green yuzu and the warmth of chili in a combination that is surprisingly versatile.
They work exclusively with green yuzu from Kochi Prefecture, harvested before the fruit fully ripens. The unripe peel carries a sharper, cleaner aroma than its mature counterpart. The team carefully removes the bitter inner pith, using only the fragrant outer zest. They also work with research institutions to ensure safety and quality.
The whole process, from harvest to bottling, is designed around one thing: keeping the fragile aroma of green yuzu alive.
