The aroma is warm and earthy with citrus and sansho lifting the top, and the heat is moderate and complex rather than one note.
Sprinkle over udon, soba, ramen, gyudon, and miso soup, dust onto yakitori, karaage, and grilled fish, or stir into mayonnaise or sour cream for a quick dip.
