鮭の塩辛：Salmon Shiokara (Salmon in Koji)
“Salmon Shiokara” is made by slowly maturing Hokkaido’s chum salmon with rice malt. We use fish that are rich in fat and nutrients before they have eggs since spawning depletes the fish of its nutrients and thins their body.
The moist and tender texture of the fresh salmon is addictive.
Salmon roe is also included in this dish.
