Nearly a thousand varieties of sea urchin, or Uni, exist in the world but only a small percentage can be eaten. Japan is home to two main types of Uni – Murasaki and Bafun (both also known as “Akauni”). 

The Hokkaido sea urchin from Rishiri Island is considered to be the most delicious variety and as a result, is highly prized. Their rich flavor is due to their diet, which consists mainly of Rishiri kelp, another local delicacy. Depending on the variety, some sea urchin are best enjoyed raw while others are more suited to cooked dishes and sauces.
